Chipotle Copycat Burrito Bowls

I love Chipotle!  But, the nearest one is over an hour from us.  Granted, there's a Panchero's about a half hour away, but we all know it's just.not.the.same.

There are A LOT of different copycat recipes for Chipotle, so I set out to find the best ones...in my humble opinion, of course!

Copy cat Chipotle Burrito Bowls

Let's start out with the pico de gallo, which I adapted from here.

Copy cat Chipotle Pico de Gallo

My version:

1 and 1/2 cups seeded, diced roma tomatoes
1/2 cup (or so) chopped cilantro
1  jalapeno, seeded and diced
1/2 jalapeno, diced NOT seeded
1/2 red onion, finely diced
Juice from 1 lime
1/2 t salt
Sprinkle of garlic powder

Stir all of the ingredients together.  Taste it to see if you need more salt or a bit of garlic.  Store in the refrigerator until ready to serve.

Note about cilantro:  I've learned that I have to dry the cilantro before I chop it or else it gets all clumpy and weird.  I just squeeze it in a paper towel before I chop it (or cut it with a kitchen scissors).

Note about jalapeno:  I like spicy things, but I'm certainly not crazy about things being so spicy that my tongue is on fire.  That being said, I didn't think it was very spicy at all with the seeded and diced jalapeno, which is why I added half of another one with the ribs and seeds.  The ribs and seeds are where a vast majority of the spice is in a pepper.

I made this during nap time!

Next up:  the veggies!

I decided that I wanted to make a fajita bowl, so I did these veggies.  I'm so glad I did!  I just sliced up 1 red onion and a half each of green, orange, and yellow bell peppers.

I heated about a tablespoon of canola oil (not olive oil, it scorches when heated that high) over medium high and waited until the pan got really hot!  I added the peppers all at once and let them sit for like 30 seconds to get a little char on them.  Then, I shook the pan (like I was all fancy on the food network or something :)) occasionally to make sure they didn't burn.  You want them to definitely still have a little crunch and be firm.

Then, I did the same for the onions!

For the beans, I just drained and rinsed 2 cans of black beans.

And the rice...oh, the rice!  I followed this recipe from Iowa Girl Eats.  The flavor is right on, but I could never get my rice to not be sticky.  I tried rinsing it before cooking and rinsing the rice after it was cooked.  But, it was still sticky.  I even tried using white basmati rice, because I read that's what Chipotle allegedly uses.

Still sticky.

I pushed on, though, adding the juice 1 lime, a small handful of chopped cilantro, and some salt.

I found out the trick, though, the following day when I reheated the rice for leftovers.  It wasn't sticky at all!  So, the next time I make these (there will be a next time!!!), I'll make the rice a day ahead of time, reheat it in the microwave, and add the goodies from there!

Now, it's guacamole time!

Here's my guacamole trick:

I cut the avocado in half, get out the pit, cut it into cubes while in the skin, scoop it out, and put it in a ziplock bag.  I squish it around to make guacamole!  When it's at my preferred consistency, I cut a corner of the bag and squeeze it into a bowl.  I only added lime and salt, because I think that's what Chipotle does.

Free tip:  If you do this in a freezer bag, you can suck the air out and freeze it!  I do that often, and just stir in some chopped tomato and a little onion after it's thawed.

Last, but certainly not least, the chicken (adapted from here).

While Aaron thinks that the flavor of the rice really makes this perfect, I think the flavor of the chicken makes it perfect.

I think we're both right :)

Here's what you need for the rub:

Copy Cat Chipotle Chicken Rub

This amount of spice is for about a pound of chicken breasts.  First, I brushed the chicken breasts with oil and rubbed on the rub.  You can do this up to a day ahead of time, but be sure to let it sit in the fridge for at least 3 hours with the rub on.

Then, you just grill it, let it rest for a few minutes, and cut into bite sized cubes!

Now comes the good part...assembling!

I made this when we had friends over (this is a super fun recipe for a group!), so I kept running outside like a blogging weird-o to take these pictures :)

I used a plate for this, but you can totally use a bowl!

Start with the rice,

then the beans,

followed by the chicken,

the amazing veggies,

sprinkled with shredded monterey jack check,

and topped with a few spoonfuls of pico de gallo,

a nice thwack of guacamole,

and a bit of sour cream!

I'm hungry again just looking at it!

I served it with chips that I got at the deli of our little grocery store...the flavor was more Chipotle-esque (although without the lime) than regular ones.

Whew!

Now that you made it to the end, I'll show you what we had for dessert later that evening!

I followed the Pioneer Woman's recipe, and let me tell you, she knows what she's doing!  It was SO amazing!

I'd be lying if I said this wasn't a lot of work, because it kind of was.  Totally worth it, though!

Keep in mind, there's a lot you can do ahead of time!

  • Make the pico de gallo
  • Slice the fajita veggies
  • Make the cake
  • Put the rub on the chicken
  • Make the guacamole (if you leave it in the bag)
  • Make the rice (which you really should do anyway)
That just leaves the actual cooking for meal time prep!

So, the next time you're craving Chipotle and don't have one next door, make this!  You won't regret it!

And, if you want to pin this, you can just hover your mouse arrow over a picture, and click on the pin it button that appears on the upper left side of the picture!

Enjoy...please, really do enjoy this!

It's awesome!

Things I Like

You know how we have computer games, like Angry Birds or Candy Crush, that suck our time up and drain us of insane amounts of productivity?  This addictive game has been doing it for centuries.

2.  Spot It

My mom is really smart.  She picks up on things quickly and is amazingly good at every kind of puzzle you can think of.  I like to say that she could have been a spy if she hadn't gotten married and had babies!

Maggie not only resembles my mom, but has that kind of brain, too!  Spot It is a very basic game where you pick out matches between several pictures on two cards, and Maggie is amazingly good at it.  I like the portability of the game and the fact that it's an easy game to explain and understand.

3.  Creative Hospitality

Leah made a nice little snack for Aaron and me :)

Then, she set the table with snacks for all of us!

That's an American flag taped to Maggie's place card!

I love Leah's sweet heart <3

4.  Imagination

I love seeing the things that our girls carry around in their backpacks!

This is what I found in Leah's backpack this weekend:

I said, "Leah, what's all this stuff in your backpack?"

She replied, very matter of fact, "We're pretending to move to Hawaii."

Obviously.

:)

5.  Dates

Here's Aaron and me on our anniversary date!

We were actually at his parents' house over our anniversary, so they watched the girls while we went out to eat at an awesome local restaurant.

Great food and even better company!

Plus, we got to eat outside :)

6.  This Girl

Drum roll please...

I think she's (mostly) potty trained!!!

WHEEEEEEEEEEEE!!!

She wakes up dry from her nap and nighttime a vast majority of the time...although, I'll keep putting her in pull ups until she wakes up dry for a month straight.

Call me crazy, but I'm passionate about uninterrupted sleep and not changing pee soaked sheets.

Gracie tells me when she has to go potty, will go when I ask her, and insists on using the regular toilet and not the potty chair.

TMI:  She's even pooped on the big toilet 3 times!

Yesssssssssssssssssssssssssssssssssssss!!!!!

Imagine me excitedly pumping my fists in the air :)

Want to know what you'll like?

7.  The recipe that I'm posting tomorrow...

You might even pump your fists in the air!

Mommy on a Missions Trip

I realize that the title of this is confusing, seeing as I'm not actually going on a missions trip, but let me explain (while you enjoy the outtake pictures of our apple orchard visit).

I spent 2 summers on missions trips in the jungle of Venezuela.  These were incredibly influential experiences in my life, to say the least.

One of the huge takeaways for me was praying.  We prayed together about every little thing. This carried through to a lot of different areas in my life and to a lot of different times in my life.

But, lately, when I get frazzled or overwhelmed, any thought of prayer or reliance on God or life in Christ seriously just flies right out of my head and heart.

I try to figure things out on my own and lean on my own understanding.

That doesn't end real well.

Needless to say, being the mom of 3 talkative and dramatic daughters can result in times of frazzle-ment and overwhelmed-hood.

Take, for example, the time that I was grocery shopping with Leah, Maggie, Gracie and Steph and Bri.

The minivan had a flat tire.

A really flat tire.

I could literally hear the air escaping from the tire.

I could hear the bolt that was in the tire smacking the road as I drove a block to a gas station with an air pump.

I called Aaron...slightly frantic.  We got the flat tire at our last stop, and Steph and Bri were managing the girls, while I changed my mind about what to do about a thousand times.

So, there was no real reason to be as frantic as I felt.  We weren't on a time crunch.  I didn't even have to respond to the avalanche of questions coming from the girls, as Steph and Bri were on that.

What would I have done if this happened on a missions trip?

I would have prayed.  I would have looked to see what God wanted to teach me.  I would have even found a way to have fun in the midst of it.

I need to have a missions trip perspective in my regular mommy life.

Take the meltdown the girls and I had on our way home from the orchard.

It wasn't really anything different that made us all meltdown.  They were tired and sick of being in the car.  I was irritated by some disobedience and bickering.

But, instead of praying, I lectured them and made them feel guilty.

Ugh.

If I would have been on a missions trip or working at camp, I would have prayed for wisdom. I would have distracted them with a song or just considered how they were feeling for one second.

A perspective change isn't necessarily dramatic.

But, it's oh so hard....shifting my reliance from myself to the most reliable Jesus.

...taking my eyes from my circumstances and fixing them on Christ.

...resting my mind in prayer instead of figuring things out on my own.

Trust in the Lord with all your heart, and lean not on your own understanding.  In all your ways acknowledge Him, and He will direct your path.
Proverbs 3:5-6

Is it weird that I'm going to be praying that I'll remember to pray more?

Because I am :)

The Pilgrimage

Honeycrisp apples.

Honey.crisp.apples.

HONEYCRISP APPLES!!!

I'm a fan.

Aaron might argue that I'm obsessed.

He may or may not be right.

While I love the mighty honeycrisp, I don't love the price of said honeycrisp.

There's an orchard a little over an hour away from our house that sells the seconds of their apples.

Now, when you initially hear about an apple being a second, you may be like me and think that they are half eaten by feral pigs or have worms sticking out.

That's totally not the case.

A second means that the color isn't perfect or the shape isn't exactly symmetrical or round or the "right" size.

The best part of seconds is that they are significantly...as in $29 for a half bushel of honeycrisps which is right around a dollar a pound.

Huge bargain for a honeycrisp!  Totally worth the long drive in my book.

Anyway, Maggie, Gracie and I picked Leah up from school and left from there to begin our pilgrimage to the orchard.

In order to keep my fellow pilgrims happy, I let them watch a dvd on the way.

But, I enjoyed the beautiful scenery!

We got to the orchard and were greeted by the apple sorters!

They are finding my seconds :)

Here are my little honeycrisps with the honeycrisps!

We bought 2 half bushel bags...

...and you can see I wasn't the only one excited about it!

We wandered over to the area filled with jarred awesomeness.

I only bought some apple butter and avoided the pickled eggs and other random pickled things that I'm sure are delightful...to the right person :)

But, right by the jarred area is a window with a beautiful view.

Leah could see, but I lifted up Maggie and Gracie so they could see, too.  Of course, the picture doesn't do it justice!

After we checked out, we headed to enjoy the outdoors.

Aside from another beautiful view, the girls really loved the horses!

Maggie looks like she's had a few too many...apples?

And, I think they even enjoyed posing by the large measuring stick!

We headed for home with our sweet companion,

the apple cider donuts.

They sell these without being coated in sugar.

Really?

Does anyone even buy that kind?

Anyway, our ride home was rough.

All of us were melting down...myself included.  More about that tomorrow.

But, on the homestretch, God gave us this nice little gift.

Yep, that's a rainbow!

What a great way to end a frazzled drive!

I hope your week is off to a great (and non-frazzled) start!

Jenny Had a Baby!

There are my girls...

I mean, obviously, they are my girls!

Then, there are these ladies...

...and I just love them, too!

I love that college students that I invested in are my friends!

I love that they minister to and encourage my heart and life.

I love that they are women that my girls love and look up to.

That just makes my heart so incredibly full.

Jenny had a baby about 6 weeks ago, and last week, Bri, Steph, and I got to visit her and meet her baby!

Evan was such a sweetheart!

He was so tired when I was holding him!  Jenny's husband, John, had the day off work and stayed home with Evan while the 4 of us when to Panera.  Evan didn't nap at all while we were gone...his daddy is pretty exciting :)

Evan was so tired that he was holding so still.  I remember when my girls were tiny and would be so exhausted that they didn't even want to move!

It was so great to spend time with Jenny and see her doing so amazingly well as a mama!  John and Jenny are a couple who have such a heart for people and they love others really well, so it's no surprise that they are awesome parents!

I love seeing Jenny so happy and confident in her role as mommy :)

It was a quick visit but such a good one!

We missed you, Becca!
Yay for friends and babies :)

Five Ingredient White Chicken Chili

I was super happy to find this recipe on pinterest awhile ago.

You can't go wrong with a 5 ingredient recipe.

You also can't go wrong when 1 of those 5 ingredients is salsa verde.

I feel incredibly awesome using salsa verde, plus I got it at Aldi.

Win!

This seriously came together really quickly, which was nice for a day like today when I folded a literal mountain of laundry during nap time.

Anyway, here's what you need:

6 cups chicken broth
4 cups, cooked and shredded chicken
2 (15 oz) cans of great northern beans
16 ounces salsa verde
2 teaspoons cumin

Yep.  That's it!

Put it all in a pot and stir to combine.  Heat it over medium high heat until boiling, then lower to medium lowish and simmer for 5 minutes.

Serve it with shredded cheese, sour cream, a squeeze of lime, avocados, cilantro, crushed tortillas...whatever your little heart desires.

Please excuse this shockingly bad picture of the soup :)

Yummy and easy white chicken chili...only 5 ingredients!

Here's a little secret about the chicken I used.  I freeze leftover chicken to use in soup later, so I just dug around in the freezer until I found enough.  There may have even been some turkey from Thanksgiving in this soup :)

My daughters' feelings about soup have been well documented, and I've decided to abandon mandatory soup tastes for this season.  It's just not worth the battle to me.

So, I made them Darcy's pasta :)

We had dinner with our friends, Tim and Darcy and their family, this weekend, and Darcy made some really good chili!  She made macaroni for the kids, and Maggie love love double loved it.

I made some elbow macaroni, drained the water, added some butter, and stirred in some cheese.  That made a yummy little cheese sauce and then I sprinkled a little cheese on top when I served it.

Maggie was sooooooo happy!  (oh, Maggie put away all of her folded clothes and Leah's and Gracie's.  She said she loves to help me...what a sweetie :))

And I was happy, too, when nobody cried at supper.

Give this soup a try when you need a quick and delicious supper!
