Caramel Truffles

You know the old saying, "The way to a man's heart is through his stomach"?

Not so with Aaron.

He's just not really a food guy.  This is actually a little freeing for me, because if I make something for dinner and it doesn't work out, he's just as happy with macaroni and cheese from a box.

But, in addition to good conversation, the way to Aaron's heart is through caramel truffles.

These take a little bit of time (most of it is waiting), but uses really basic ingredients.



Melt 1 cup caramel bits (or 26 caramels, but use the bits...way easier), 1 cup milk chocolate chips, and 1/4 heavy cream in a microwave safe bowl for 1 minute.  Stir.  Microwave in 30 second increments, stirring each time until smooth.

Pour into an 8x8 inch pan lined with plastic wrap.



Refrigerate for about an hour or until firm.

Cut into rows...



Then cut into squares (I make 36)...



Sometimes the corner pieces end up a little too small to roll, so you can have them for a little snack :)

Now roll them into little balls!



Pop them back into the refrigerator for another hour or so until they're firm.

You can even leave them in there for several hours (until the lighting gets bad in your kitchen) before you dip them in the 1 and 1/3 cups semi-sweet chocolate chips and 1 tablespoon of shortening that you melted until smooth in the microwave.  You might need to melt extra chocolate chips if you run out of melted chocolate.



You can decorate the top with whatever kind of sprinkle or decorative candy you wish and all of the sudden you have fancy Christmas candy, or fancy Valentine's candy, or fancy birthday candy or even fancy groundhog day candy!

And I'll have a very happy husband :)
