January Menu

Well, lookie here!  It's the January Menu!



Seeing as it's Monday, we actually have eaten some of the meals!  The Hawaiian One Pan Pasta was good!  It was a little salty (probably because the meat in it is salty), so I would leave out the additional salt in the recipe.  I thought the pineapple was a fun addition!

The Best Chicken Enchiladas were great!  I don't know that I'd say they're the best, because I'm more of a white chicken enchilada girl myself, but they are certainly good, and I'd make them again.  I made the enchilada sauce that is linked to the recipe and it was very good and easy.

August Menu

Happy Monday!  

I hope your week gets off to a great start!  

As always, I hope this menu gives you some new meal ideas.  I'm especially looking forward to trying the pancetta wrapped pork tenderloin!  I'm also on the look out for a great carnitas recipe, so I'm hoping to make headway on that ever important foodie quest by making the Cuban Street Tacos.  I made some great carnitas earlier this year, but I can't find the recipe I used!  Oh well, it's a tasty process :)

July Menu

Happy Monday morning, friends!  

We are out of town with Aaron's family right now and are having a wonderful time!  Poor Gracie has skinned her knees twice, but I've got her covered with bandaids, so hopefully that does the trick!

I hope you can find a couple of new meals to try!  I'm especially excited about the Smoky Pork Tacos with Peach Cherry Salsa and Crispy Fish Tacos.  We had the Easy Popcorn Chicken last month and everyone ate it without a complaint.  I'm not going to say it's healthy, because it is fried, but it sure is yummy!

May Menu

Here it is!



Seeing as we've had some of these meals, I'll give you our feedback!

Skillet Mac and Cheese:  everyone ate it!!!  It's a quick recipe to make, too...you can have it on the table in 30 minutes.

Bean Burritos:  The recipe I use for the beans is super basic and easy peasy (in the slow cooker)!  I add garlic powder, cumin, salt and pepper to taste.  I even squeezed in some lime seeing as I thought it needed some acid.  Make sure that you put in a little tomato and lettuce (in addition to the cheese and sour cream, of course) for some good texture.  The girls had quesadillas.

Potatoes:  The potatoes that we had with the barbecued chicken are quite possibly my favorite preparation of potatoes.  I do half butter and half olive oil instead of all olive oil.  I don't add the rosemary, because that's a bit much for my people.  I do salt, pepper, and a bit of garlic powder.  

For our Cinco de Mayo festivities, we had fajitas from The Pioneer Woman's holiday cookbook, black beans and rice (courtesy of Steph), yummy salsas made by Bri and chips, and tres leches cake.  Soooooooooo good!  Oh, and guacamole that I bought at a local Mexican restaurant.  I was going to make it, but regardless of all of the tricks I tried to get mine to ripen, they were still rocks!

April Menu

Whew...it took me a while, but here it is!  




So, seeing as we've eaten the recipes from the first week, let me tell you my thoughts :)

The Crockpot Chicken Cacciatore was amazing.  I served it over egg noodles.  It makes a ton and reheats well for lunch leftovers :)

The Bacon Corn Pasta was okay.  I made a substitution that might have made it too dry.  I think I might try it again, though, because...bacon!  

I didn't make the Garlic Lime Chicken because Aaron was out of town and I didn't want to make something big for just me and the girls.  I let them pick their own lunchable (because Leah always begs me and I always say no) and own fruit at the store for supper.  They all got the pizza lunchable and didn't really like it.  It made me oddly happy :)  

The Best Pasta Dish Ever really is awesome...such an interesting combination of ingredients.  I didn't make it, because I was tired.  I had leftover chicken cacciatore again.

We liked the Homemade Cheeseburger Helper.  I used mild cheddar instead of sharp cheddar which is what the recipe calls for.  That was a mistake.  You kind of lose the cheese taste when you use the mild.  I'll be sure to, you know, actually follow the recipe the next time I make it :)

Fish Sticks...I was having a girls night out, so Aaron made fish sticks and tater tots for the girls.  Yeah, it was their favorite meal of the week.

This brings me to answering a question that people often ask me: What happens if I don't want to make what's on the menu?

Answer:  I don't.  I am wild, edgy, unpredictable, and impossible to categorize.  Or something like that.

I would say that I make the assigned meal about 80% of the time.  I switch days around about 15% of the time and do something totally different about 5% of the time.  

I just reeeeeally like not having to figure out what to make for supper that morning.  Even though it takes 2 or so hours to figure out a menu a month at a time, it's a good investment of time for my peace of mind and stress level.

March Menu

This week is off to a big and busy start!

We are finally doing the big room switch-er-oo!  Maggie is moving to the top bunk, Gracie is moving in with Maggie to the bottom bunk, and Leah is getting her own room.  

I'm not going to say that the girls are big fans of change, but I think they'll do okay.  Leah and Maggie kind of want to stay together, but then sometimes Leah wants her own room.  I don't know.  We shall see how it all shakes out.  Aaron is staying home in the morning to help with the big switch which is good.  I can be like an easily distract-able raccoon (ooooo, something shiney!), but Aaron just puts his head down and gets stuff done.

The Whole 30 Thoughts and Regular Menu

It's true!



The Whole 30 is but a happy memory.

Perhaps the happy part is debatable :)

Aaron and I were talking about it last night and I told him that I feel like you have to be hardcore to do the whole 30 and eat paleo in general.  

I wouldn't say that anyone would use the word hardcore to describe me.  

Fun?  Maybe.  

Quirky?  Yes.  

Slightly ridiculous?  Probably.

Hardcore?  No.  No no no no no no noooooooo.

And I'm not saying that hardcore people can't be fun, quirky, and/or slightly ridiculous.  I'm just not able to multitask in that manner.

Anyway, here's a small example about why it was hard...aside from all of the insane prep work.

Take a look at this broccoli recipe that I'll be making at least twice this month (without the rice).  I couldn't have it because there was a tiny bit of sugar in one of the sauce ingredients.  I kept running in to recipes like that which was kind of frustrating and discouraging.  

I maybe felt a little better doing the whole 30.  I feel like I woke up easier in the morning, but I don't really have a hard time falling asleep at night, so I didn't notice a change there.

My friend, Kendra, was doing this the same time as me and she felt amazing!  
I'm guessing that I don't have sensitivities to dairy or gluten or whatever else I wasn't eating, so I wouldn't have the same sensation of feeling sooooo much better!

If I would have noticed a huge change in how I was feeling, I think I would have been more apt to stick with a lot of those changes after the whole 30 was over.  It would have been a lot more worth it.  Aaron and I both agree that I'm a lot, um, shall we say, more myself and less irritable when I'm not doing the whole 30!

I did have some really awesome takeaways, though!

  • Water!  I hopped back on the drinking water train, and I like it!  I'm doing well with drinking close to 3 nalgenes of water a day which is what I was shooting for.
  • Snacks!  I think I trained myself to not feel like I need to eat after the girls go to bed.  I also didn't have snacks during nap time, either, and I'd certainly like to keep that up.
  • Vegetables!  I already ate a lot of veggies even before the whole 30.  But, I'd like to have veggies at every meal (including breakfast) and have a salad and other sort of vegetable at supper.  I feel fine replacing the breakfast veggie with berries if I'm having steel cut oats.
  • Lunch!  I'd like to have soup or salad for lunch every day.  This has always been my preference, but I'd like to actually do it!  I'm not a huge sandwich bread fan.  I mean, I like it, but if I'm going to have bread, I'd way rather have crusty bread or fresh, homemade dinner rolls.
  • Zoodles!  Making noodles out of zucchini was by far my favorite discovery of the whole 30.  I thought they were great!  I'm totally going to continue to replace spaghetti with zoodles for myself.
  • The Good Creamer!  Another outcome I was hoping for with the whole 30 was to decrease my desire for sweets.  I drank my coffee with coconut milk during the whole 3o and it was drinkable.  Not my preference, but I could kind of enjoy it.  I'm glad to say that now when I enjoy coffee with The Good Creamer, I only use about half the amount of creamer than I did previously (1 and 1/2 tablespoons as opposed to 3 tablespoons...yeah, I measure it.  I'm the nerd with the digital watch and timer, remember ;))
The above takeaways were the type of outcomes I was hoping for, so I'm really pleased!

I should tell you that I did go off the plan a few times at the end.  I had 2 pieces of homemade pizza, a chai, the broccoli I mentioned above, and ate whatever I wanted for the Super Bowl.  I woke up with a food hangover on Monday morning!  I mean, I've never had an actual hangover, but from what I've heard, it was pretty similar.  I had a pounding headache and was really thirsty.

The November Menu is a little late because I've been busy getting my wisdom teeth out!

I'm doing really well, actually!  The girls stayed with my parents for the weekend, and Aaron has been doing an ahhhhhmazing job taking care of me!

I kind of feel like I'm on vacation :)
