Pork Chops with Cinnamon Apples

I am transferring all of the recipes from my soon to be defunct food blog to this blog!  Here's a good one!
Let’s discuss the awesomeness of this recipe (that I adapted from here).
I mean, it pretty much embodies all things fall!  It came together really fast which is a big deal.  I mean, I’m pretty much the slowest cook in the world…possibly due to the cute little distractions I have running around!  The recipe doesn’t call for a ton of ingredients, either.
And, it goes without saying, you can get all of the ingredients at Aldi :)

Aaron and I loved this dish!  The pork didn’t get dry and the apples were so, so delicious!  The girls all gobbled up the apples, and Gracie loved the pork, too.  I’ll be making this again soon.

Tomorrow I’ll give you the recipe for the Maple Roasted Carrots that I served with it!

This recipe is autumn on a plate! Even better, it's quick, easy, and certainly delicious!
Ingredients
  • 1 pound pork loin chops
  • 1 tablespoon butter
  • 1 tablespoon extra virgin olive oil
  • salt and pepper
  • 3 firm medium sized apples, peeled and chopped
  • ¼ cup brown sugar
  • 1 teaspoon cinnamon
  • ⅛ teaspoon nutmeg
Instructions
  1. Season the pork chops on both sides with salt and pepper.
  2. Heat the butter and olive oil in a skillet over medium heat.
  3. When the butter has melted, add the pork chops. Cook for 2-3 minutes. Flip the pork chops, and cook for 2-3 minutes on that side. You are just browning the pork chops.
  4. Put the chopped, peeled apples in an 8x8 or 9x9 inch pan (that you've sprayed with nonstick spray). Sprinkle the brown sugar, cinnamon, and nutmeg on top of the apples. Place the pork chops on top of the apples and bake at 350 degrees for 30 minutes.
